For those who are trying to use up all the eggs they bought, consider a batch or two of homemade pasta! Don't have a pasta press? This pasta recipe doesn't need one, and it's effortless, so don't worry!! My mother and I even had a race to see who could make pasta faster (store bought vs homemade), and get this, it was a tie!!! So one of my aunts gave me a miniature food processor (thanks Julie!!!) I finally put this to good use and made a batch of pasta!! (You don't need this either though, it just makes it easier.) To make it a little different this time I added some Alfredo sauce I made the night before and some freshly fried bacon! I apologize, I neglected to take pictures of making the Alfredo, but I followed this recipe and it was wonderful!!!

So, for the pasta, it's very easy. To make 1 serving, use 1 large egg for every 1/2 cup of flour (you can add oil and flour till it's workable if you need it.) Then you want to mix it either by hand or in a food processor till it reaches the consistency of moist dirt. The hardest part for me used to be getting enough moisture to absorb all the flour while not getting so sticky that it can't be worked. I find that it is just right when it can hold its form before and after slight pressure without crumbling.
Work it into a ball and divide into adequate size pieces. The next step depends entirely upon time, resources, and desire. I wanted to try making a basic orecchiette (yes, I know these are the wrong shape, but bare with me, it was my first time.)
In order to work these without taking to much time, I used 2 spoons as my pasta press. Here's my process (which, again, is horribly wrong for orecchiette, sorry) :
 |
| Take a reasonable piece, and place near the handle of the first spoon. |
 |
| Next, place the second spoon on top and squeeze to form the shape. |
 |
| Remove the top spoon and gently scrape off the noodle. |
 |
| Gently round out and there you go :) |
So for everyone's favorite part, bacon!!!! Quickly fry up your bacon to the desired texture (Make sure its cooked though!!), add the Alfredo sauce and heat to temp.
I mixed a quick balsamic and olive oil dip for some french sourdough my parents had on hand and served.
Questions or comments? Dying to say something?? Please do!
Hey, I like the wooden board in the last photo.
ReplyDeleteThe pasta looks pretty solid too.
Congrats again on the dinner last night.
Thanks! Did you ever have a chance to try it?
